I had originally planned to only post this soft, delicious and easy Lemon Poppy Seed Cake Mix Cookies Recipe but this post kind of got away from me. There’s so much I’m learning about life through writing this blog and the experiences I’ve had on the outside that I felt like I HAD to share it.
When the idea of this blog first came about I was excited, but scared. What if I had nothing original to give? What if it didn’t succeed? What if I wasn’t as creative as I thought….
And then I realized that a lot of that was fear based.
When it came time to actually start my blog a whole other form of fear came in… perfectionism. I read so many books and blogs and how-to manuals that I seriously got overwhelmed. I was scared it wouldn’t be perfect right out of the gate. I was scared it wouldn’t compare to all of the blogs that I kept up with like Your Cup of Cake, A Beautiful Mess, and Oh Happy Day. That I would go to mixers with old coworkers and the first thing they would ask would be how are your numbers.
Needless to say, this blog almost didn’t happen because of FEAR. Then, something struck me while I was writing and crafting and testing… it doesn’t have to be perfect. Life isn’t pinterest (even though we wish it was). You just have to start.
This has kind of become my mantra as of late…
Start now. Start where you are. Start with fear. Start with pain. Start with doubt. Start with hands shaking. Start with voice trembling but start. Start and don’t stop. Start where you are, with what you have. Just… start. ~ Ijeoma Umebinyuo
So thats what I did. I started. I started a week early because I just felt this burning need to… and I haven’t looked back. I’ve created more in the last month than I did for most of last year. Specifically things that I love. Things that spark joy, if for no one else than myself.
And that is where I am. I’m debating on whether I want to keep the personal stuff off here, but I just felt the burning need to share that today.

Okay, on to cookies. These are probably one of my favorite things to make. They’re super soft, easy, and really impressive. They’re also REALLY easy to make with kids.
Lemon Poppy Seed Cake Mix Cookies Recipe
Ingredients
- 1 Box Duncan Hines Lemon Supreme Cake Mix
- 2 Eggs (at room temp)
- 4 Tablespoons Poppy seeds
- 6 Tablespoons Melted Butter
- 1/2 c Powdered sugar
- 3 Tablespoons Water
Instructions
- Preheat oven to 350
- Mix Cake mix, eggs, poppy seeds and butter together in a large mixing bowl until combined
- Using a spoon, drop cookies onto a Parchment paper lined baking sheet about 3 inches apart
- Bake for 8-10 minutes or until edges are lightly browned
- Let cool
- Mix water and powdered sugar together to create a drizzle
- Drizzle over your cooled cookies
